Over the past year, I've been trying to cook more at home so I'm constantly searching Pinterest for new and simple recipes to try. Here are some of my favorites so far!
French Beef Stew: I LOVE this recipe. It's pretty easy but it does take two days to prepare (so make sure you plan ahead!) I don't care for olives so I didn't add them, but I did add a jar of tomato sauce to make it a bit sweeter.
Skillet Apple Pie: One of the best apple pies I've ever tasted. Just add some vanilla ice cream and you will be in Heaven!
Balsamic Parmesan Roasted Asparagus and Tomatoes: Super simple, super good.
Maple Dijon Roasted Carrots: I made these at Christmas as a last minute side plate. Even without all of the ingredients, they were definitely a crowd-pleaser.
Chicken with Mustard Cream Sauce: I've made this recipe more than any other on this list. It is quick, only has a few ingredients, and is absolutely delicious.
Tomato Basil Parmesan Soup: This soup is perfect on a cool day when curling up with a good book. The only thing I would suggest is sauteing the onion for a bit in a frying pan before adding them to the crock pot.
Lemon Chicken Orzo Soup: Anyone who knows me knows that I could probably live off soup. This has definitely become my new favorite!
Dijon Potato Salad: A great twist on traditional potato salad. I like to serve it a bit warm.
Shepherd's Pie: I'm not going to lie, this took me about two hours to make...but it was worth it! I think it tasted even better the next day as leftovers.
